Sun Bars


Description

Sun bars are a rich tasting, high-protein breakfast bar made in your dehydrator that does not use milk, sugar or eggs. 

Ingredients

32 Bars
 4 cups sunflower seeds, hulled
 1 cup walnuts or almonds or pine nuts
 2 cups pitted dates
 2 cups raisins or other dried fruit
 1 cup honey
 1 cup apple juice
 1 tablespoon vanilla
 2 teaspoons cinnamon
 2 cups coconut (optional)

Methods/steps

  1. In blender or food processor, finely grind walnuts and sunflower seeds.  Set aside.
  2. Chop dates into blender sized pieces.
  3. In blender, combine dates, honey, apple juice, cinnamon and vanilla.  Blend until smooth.
  4. In large mixing bowl, mix nut mixture, raisins and date mixture.  Mix well.
  5. Shape dough into 2" balls and roll in coconut.  Slightly flatten and place on dehydrator tray.
  6. Dehydrate at 125°F to 130°F for 8-10 hours.
  7. After cooling store in airtight container or a vacuum sealed bag.
