Greek Shiitake Mini Pizzas

Delicious & attractive miniature Greek Shiitake pizza's with incredible flavor. Guaranteed to be the hit of the party. A great dehydrator recipe.

| shiitake mushrooms with stems removed | | 2 | tablespoons olive oil
| | 3 | teaspoon sea salt
| | 6 | cherry tomatoes | | 1 | red onion
| | 1 | yellow bell pepper
| | 6 | greek kalamata olives | | ½ | cup macadamia nuts (soaked 3 hours in water)
| | 1 | cup chopped spinach | | 1 | lemon, juice only | | 2 | tablespoons water
| | 1 | tablespoon nutritional yeast |
Methods/steps
- Combine olive oil, 1 teaspoon sea salt and add to mushrooms in a zip-lock bag and marinate for 3 hours (while macadamia nuts are soaking).
- Drain macadamia nuts and chop finely.
- Blend macadamia nuts, spinach, lemon juice, water, nutritional yeast, and remaining 2 teaspoons sea salt.
- Spoon carefully into Shiitake mushrooms.
- Thinly chop/slice the cherry tomatoes, red onion, bell pepper, and olives. Place on top of mushroom filling.
- Dehydrate at 105°F for 2 hours.
