Greek Shiitake Mini Pizzas


Description

Delicious & attractive miniature Greek Shiitake pizza's with incredible flavor.  Guaranteed to be the hit of the party.  A great dehydrator recipe.

Ingredients

 shiitake mushrooms with stems removed
 2 tablespoons olive oil
 3 teaspoon sea salt
 6 cherry tomatoes
 1  red onion
 1 yellow bell pepper
 6 greek kalamata olives
 ½ cup macadamia nuts (soaked 3 hours in water)
 1 cup chopped spinach
 1 lemon, juice only
 2 tablespoons water
 1 tablespoon nutritional yeast

Methods/steps

  1. Combine olive oil, 1 teaspoon sea salt and add to mushrooms in a zip-lock bag and marinate for 3 hours (while macadamia nuts are soaking).
  2. Drain macadamia nuts and chop finely.
  3. Blend macadamia nuts, spinach, lemon juice, water, nutritional yeast, and remaining 2 teaspoons sea salt.
  4. Spoon carefully into Shiitake mushrooms.
  5. Thinly chop/slice the cherry tomatoes, red onion, bell pepper, and olives.  Place on top of mushroom filling.
  6. Dehydrate at 105°F for 2 hours.

Additional Tips
