Ahhhh, foods of the southwest.  The southwest is a land of contrasts and similarities that provides us a pallete of foods unequaled by many other regions of the United States.  Southwestern food consists of cooking methods and flavors that are a blend of American Indian, colonial Spanish, American Settler and the proud people of Mexico.  Southwestern food promises a tasteful variety of recipes that once hooked, you are not easily pulled away.  Smells of roasted chile’s, wood smoke and sizzling meats are what come to mind when thinking of the foods of the southwest.

Southwestern Pork Sausage

One of my favorite foods that I yearn for as we leave winter behind and welcome spring is Southwestern Pork Sausage.  While I am from the land of brats and beer, I cannot pass up a grilled Southwestern pork sausage served on a freshly baked roll, topped with roasted peppers and onions.

This fresh sausage recipe is sure to cause a crowd of family and friends when you break out the grill and aroma  of Southwestern Pork Sausage spreads throughout the neighborhood.   A delicious sausage that combines chiles, coriander, red pepper and cumin that is an example of southwest culinary excellence.   I find that when I want to save the majority for myself, I jack up the red pepper to weed out the weak guests from eating too many.

Here is a quick rundown of the ingredients to wet your appetite.

3½   pounds lean pork butt or shoulder
½     pound pork fat
1        tablespoon plus 2 teaspoons kosher or coarse salt
1        tablespoon freshly ground black pepper (fine grind)
2       teaspoons crushed red peppers (for medium-hot)
1        teaspoon ground coriander
1        teaspoon ground cumin
½     teaspoon ancho chile powder
4       cloves garlic, finely chopped
